Victorian sponge cake with strawberry frosting

Ingredients                          Qty

Maida                                   1 ½ cup

Baking powder                    1 tsp

Baking soda                       ½ tsp

Butter                                  200 grams

Sugar                                     ¾ cup

Vanilla extract                    a few drops

Eggs                                         3

Milk                                     200 ml

Strawberry Cream cheese Frosting

Butter                                 ½ cup

Cream cheese                  200 grams

Vanilla extract                  a few drops

Powdered sugar                 3 cups

Corn starch                        2 tbsp

Strawberries                       a handful

Strawberry puree                 4 tbsp



  • Dry ingredients- First take a large mixing bowl; add 1 ½ cup Maida, 1 tsp baking powder, ½ tsp baking soda and ¾ cup sugar. Mix all of these ingredients well.
  • Wet ingredients- Take another large mixing bowl; add 200 grams melted butter, 3 eggs, 200 ml milk and a few drops of vanilla extract. Mix all of these ingredients thoroughly.
  • Now transfer the wet ingredients into the dry ingredients bowl and whisk well. Make sure everything is mixed well.
  • Take a baking tray and place a wet baking and cooking paper, pour this batter. Place in the oven at 200 degree Celsius for about 20 minutes (The temperature and time may vary depending on the oven).
  • While the cake is baking, prepare the frosting. Take a large mixing bowl, add ½ cup melted butter, 200 grams cream cheese, a few drops of vanilla extract, 3 cups of sugar, 4 tbsp of strawberry puree and 2 tbsp corn starch. Mix all of these ingredients using an electric blender.
  • Once the cake is done, remove from the oven; using a piping bag, decorate them with strawberry cream cheese frosting. Garnish with some fresh strawberries on top.
