Soya Biryani


Ingredients                   Qty

Oil                                  1 tbsp 
Ghee                              1 tbsp 
Chopped Tomato            2 
Chopped Green Chilli      1
Ginger Garlic paste        2 tbsp 
Turmeric powder           ½ tsp 
Chilli powder                 2 tsp 
Garam masala powder   1 tsp 
Salt                              to taste 
Coriander powder      1 tsp 
Yogurt                         ½ cup 
Soya                             500 grams 
Mint leaves                     a few 
Saffron                             in milk 
Dough                           to seal 

For fried onions 
Onion slices                    4 
Oil                              ¼ cup 

For cooking rice
Basmati rice             500 grams 
Water                     as per requirement 
Salt                     2 tsp 
Green Cardamom  3
Black Cardamom    2
Star Anise                1
Cinnamon             a piece 
Clove                     a few 
Oil                    1 tsp 

Method: 

1.    Take a wide shaped pan, add oil and onions. Fry them until they turn brown. Keep this aside. 
2.    Boil water and add soaked basmati rice, salt, bay leaf, black cardamom and green, star anise, cinnamon, clove and oil. Cook the rice till it is 3/4 th done. Strain the excess water from rice and keep it aside. 
3.    Take a pot, add oil, ghee, onion, and green chilli. Sauté it. 
4.    Once the onion becomes transparent, add ginger garlic paste. Sauté till it becomes brown. 
5.    Add tomato, chilli powder, turmeric powder, coriander powder, salt, garam masala and minced soya. Mix all the ingredients well and allow it to cook for about 20 minutes. 
6.    Add yogurt and mix again. Close with a lid and cook for another 15 minutes. 
7.    Check the seasoning and cook it on low flame. 
8.    Add coriander leaves, mint leaves , fried onions and then cooked rice. Add the saffron in milk and fried onions. 
9.    Now close the lid and seal it with dough around the lid. Keep it for about 10-15 minutes. 
10.    Turn off the flame and leave it for about 5 minutes. 
11.    Break open the seal, before serving add some ghee on top and some onions (optional).
