Sapota Mousse

Sweetened whipping cream
Custard powder  
300 grams
½ litre
3 tbsp
5-6 tbsp
 20 grams


  • In a large bowl, using an electric whisker, whisk the sweetened cream until it forms soft peaks. Keep this aside.
  • Take a vessel and boil ½ liter milk on medium flame. Take a small bowl, add some cold milk and mix custard powder in it, to this add 5-6 tbsp of sugar. Allow the sugar to completely dissolve in the custard powder. Add this mixture to the boiled milk. Keep stirring continuously. Allow it to cool.
  • In a small bowl, take gelatin and mix it with hot water.
  • Once the custard mixture cools down, add sapota puree (make a puree with about 10-15 sapota) and whipped cream. To this, add gelatin. Transfer this content to serving bowls and keep it in the refrigerator for a couple of hours or overnight. Allow it to set. Then, serve it chilled.
