Queen of Fruits: Strawberry

It’s once again the season to welcome the queen of fruits, the magnificent Strawberry. This bright red juicy berry is full of healthy nutrients and its right for any time of day.

Nothing packs a more healthy punch than this powerful little berry. Strawberries have more vitamin C than most citrus fruits. Rich in fibre, regular consumption of strawberries helps the body absorb nutrients beneficial to the immune system. And the high antioxidant levels help neutralize the harmful effects of free radicals. Known to inhibit the production of cholesterol in the liver, strawberries are a natural means of reducing the likelihood of high blood pressure. The antioxidants play an important role in reducing the oxidation of bad cholesterol. Spring Strawberry Salad

2 cups of strawberries
3 cups of salad greens (iceberg lettuce or Chinese cabbage)
1½ tbsp white vinegar
½ tbsp honey
2 tsp hazel or pine nuts
1 tsp olive oil
Salt and pepper to taste


Chop the salad greens and cut the strawberries into quarters. Mix together the white vinegar, honey and olive oil. Add a little water for consistency. Season with salt and pepper according to taste. Pour over the strawberries and greens and toss well. Sprinkle the nuts on top, and it’s all ready to be eaten.
