To prepare the stuffing:
- First boil the potatoes. Take a frying pan, add 2 tbsp ghee, 2tbsp chopped garlic and ginger. Keep stirring and allow to cook. Once the garlic turns golden brown, add 1 onion and let it fry until it turns golden brown. Now add the chopped boiled potatoes, salt , 2 tsp red chili powder, 1 tsp turmeric and 1 tsp coriander powder. Once the potatoes are cooked, mash them and finally add some coriander leaves and some lemon juice. Turn off the stove and allow the stuffing to cool down.
To prepare the pastry:
- In a large mixing bowl, take 2 cups of maida/ all purpose flour, 1 tsp salt, 1/2 tsp ajwain, 4 tbsp ghee and 150 ml cold water. Mix all the ingredients and knead the dough until it becomes soft. Cover it with a lid and allow it to cool for about 30 minutes.
- Now take a rolling pin and flatten the dough and make round shapes. Now fold the round shapes into equal halves. It should be in the shape of a cone. Now fill this cone with the stuffing. Seal the edges by pinching it between your fingers.
- Take a large frying pan, add oil/ghee and gently drop the samosa and fry them till they turn golden brown. Serve them hot with some mint chutney or tomato ketchup.
