Palak tofu 

Ingredients              
Chopped spinach      
Oil                              
Chopped onions        
Tofu                          
Turmeric powder        
Garlic                         
Green chillies              
Fresh tomato pulp      
Salt                              
Garam masala            
Fresh cream                 
Water

Method: 

•    Take a vessel and blanch chopped spinach in boiling water for about 4-5 minutes. 
•    Drain the water and clean with cold water and blend this spinach in a blender till it becomes a smooth paste.  
•    Now take a frying pan, add oil and fry ¾ cup of onions, until they turn golden brown. To this add, 2 green chillies, 3 cloves of garlic, ½ tsp turmeric powder and sauté for about 2-3 minutes.  Add tomato pulp and keep stirring. Next step is to add the spinach paste, 2 tbsp water. Mix thoroughly and let it cook on medium flame. 
•    Before turning off the flame, add 2 ½ tbsp fresh cream and 1 tsp garam masala. Finally, add tofu and let it cook for about 2-3 minutes. Turn off the flame and serve hot with some rice or roti.
