Instructions

1. Cut the pork ribs into two pieces, mix some oyster sauce and grill on the griddle till it is evenly browned. Prepare the braising liquid with fresh water, sliced ginger, spring onion, garlic pods, dark soya sauce, salt, and sugar.

2. Place the ribs in the braising liquid and bring it to boil on high heat. Lower the heat to medium low and simmer till the ribs are tender. Remove it from the pan and keep it aside.

3. Heat oil in a wok. Fry the chopped garlic and onion, and crushed chillies till they turn light brown and then add black pepper. Deglaze with some stock and season with fish sauce, oyster sauce, dark soya sauce, and sugar. Thicken the sauce with some corn starch slurry.

4. Finish it off with chopped green onion and fried garlic. Grill the braised ribs in a hot griddle till it is evenly browned. Arrange on a platter and pour the prepared sauce over it.

Instructions

1. Slice the fish and dust it evenly with corn flour. Fry it in hot oil till it turns crispy. Heat the wok with the oil, fry chopped garlic and crushed chillies till they turn light brown. Deglaze with some stock and then add the sugar, oyster sauce, fish sauce, and dark soya sauce. 

2. Taste the seasoning and thicken the sauce with the corn starch slurry. Finish it with some fresh basil and then arrange the fried fish on a platter. Top it up with the sauce.
