1. Add salt to the curry cut lamb pieces and rub well. Then wash it thoroughly. Heat ghee in a pan and add whole garam masala to it. Finely slice the onions, add them to the pan, and sauté till they’re golden brown.
2. Mix the ginger and garlic paste, add it to the onions, and cook well. Add the mutton pieces and some salt to the pan and sauté for 30 to 40 minutes, and then add the coriander powder, Kashmiri chilli powder, and turmeric powder to it.
3. Once the masala is cooked and the mutton starts to get tender, add the tomato puree and some water to it. Cover the pan with a lid and let it cook on a slow flame. Once the mutton is cooked, garnish it with coriander leaves and ginger juliennes.
