Harissa Chicken

chicken leg (with skin, de-boned)    220 gm
pimento peppers                             40 gm
red chilli                                           5 gm
cumin powder                                  1 gm
coriander powder                            1 gm
malt vinegar                                     5 ml
tomato paste                                   5 gm
garlic                                               3 gm
olive oil                                          10 ml
bell pepper                                     5 gm
cucumber                                       5 gm
tomato                                            5 gm
olive                                               2 gm
onion                                             5 gm
lettuce                                           5 gm
lemon juice                                    5 ml
salt                                                to taste
crushed pepper                            to taste
feta cheese                                  5 gm
pita bread                                     2 pcs.
hummus                                       50 gm


1.   Roast, peel, and de-seed the pimento. Place in a food processer with red chilli, cumin powder, coriander       powder, malt vinegar, tomato paste, garlic, and olive oil. Make a fine paste of it. Season as desired.
2.   Marinate the cleaned chicken with the paste.
3.   Sear the chicken, and place it in an oven pre-heated to 200°C. Bake for 12 minutes.
4.   To make the fattoush, dice the remaining vegetables, and toss with olive oil and lemon juice. Season,          and add feta cheese.
5.   Serve the chicken with fattoush, hummus and pita bread.
