Beetroot Carrot Soup

Ingredients  
Beetroot, chopped  
 Carrot, chopped   
Lauki, chopped      
Tomatoes, chopped     
Cloves garlic, smashed    
Ginger     
Salt           
Qty

Instructions:

  1. Pressure cook all the ingredients for one whistle. When it is safe to open the cooker, remove the ginger and garlic from the mix.
  2. Blend the rest of the ingredients well, to the desired consistency.
  3. Serve hot, with freshly ground pepper on the side.

Quinoa Soup

Quinoa Soup

Ingredients
Quinoa, washed and drained
Small onion, chopped 
Mixed vegetables  

broth/stock/water    
Green chillies   
Crushed pepper 
Salt       
Coriander  
Lime juice   
Qty
½ cup

2 cups (tomatoes, beans, ccarrots,peas,
cabbage,zucchini and mushroom)
4 cups
to taste
to taste
to taste
to garnish
to garnish

Instructions:

  1. Cook washed quinoa, onions, mixed vegetables, green chillies, broth and salt in a pressure cooker for one whistle.
  2. When cooled, decant into a serving bowl and add cilantro, black pepper and lime juice to taste.
  3. Serve hot with the garnishes of your choice.
