DIY recipe : Thai Style Chicken Red Curry

Curry is one of the go-to dishes in the thai cuisine. Most people love the absolutely delicious and comforting red, green and yellow thai curries. They go well with a bowl of jasmine rice. It is a perfect dish for a lazy lunch or for the days when you feel like eating something flavourful.

The Thai style chicken red curry is not only filled with a whole lot of flavours but it is also extremely easy to make at home.

Ingredients                     Qty

Chicken thighs
Spring onion
Red bell pepper
Olive oil
Red curry paste
Cashew milk
Corn starch
Cold water
Salt
Fresh cilantro leaves
500 gms (boneless and skinless)
1 sprig
8- 10 (thinly sliced)
2 tbsp
2 tbsp
3 cups
2 tbsp
¼ cup
1 tsp (add more as per taste)
for garnish

Instructions:

1. Take a large pan, add olive oil, chicken pieces, bell pepper, and spring onions. Cook on medium heat. Cook time is between 6-8 minutes, make sure to stir the chicken occasionally.

2. In a small bowl, take some cold water and mix cornstarch. Keep this aside.

3. Once the chicken is cooked, add cashew milk, red curry paste and salt. Mix all the ingredients well and bring to a boil. Now add the cornstarch and stir for another minute or two. The curry has to thicken.

4. Once the curry becomes thick, taste to see if it needs more salt. It's ready to serve with a bowl of rice or noodles. Garnish with fresh cilantro leaves.
