Aloo Anar Chat is a north Indian mouth watering fast food recipe made with baked Potato and Pomogranate, this easy and flavorful recipe is a perfect appetizer. On the other hand Chinese style steamed stuffed mushrooms are not only cute to look at but are tasty quick bites that can be served before eating a full meal. Chef Gaurav Chakraborty, Executive Sous Chef at Novotel Hyderabad Airport has shared these flavorful recipes.
Aloo Anar Chat in Popadum Baskets:
potato (finely diced) 1
onion (chopped) 1
coriander (chopped) 100 gm
green chilly (chopped) 2
tomato (chopped) 1
mint (chopped) 100 gm
tamarind chutney 10 ml
mint chutney 10 ml
salt to taste
Cut the popadams into small circles about 8 cm across, roast in an oven till they become soft.
Shape them into baskets. Set aside.
Deep fry the potato and mix with coriander, mint, onion, chillies and pomegranate. Season with salt. Add tamarind and mint chutneys as dressing.
Garnish with a sprig of mint and pomegranate seeds.
Steamed Stuffed Mushrooms:
button mushrooms (large) 10gm
red bell pepper (chopped) 15 gm
green bell pepper (chopped) 15 gm
garlic (fried and chopped) 5 gm
onions (chopped) 10 gm
coriander (chopped) 10 gm
green chilly (chopped) 2 gm
salt to taste
cheese (grated) 30 gm
1) Wash the mushrooms and remove the stalks.
2) Mix the bell peppers, fried garlic, onions, coriander, green chillies, salt and grated cheese.
3) Stuff the mushrooms with the mixture.
4) Steam in dim sum baskets.
5) Serve hot with mint chutney.
