Check out this recipe of Carrot pickle

Ingredients       
Carrot     
Nigella seeds    
Fenugreek seeds 
Mustard seeds    
Asafetida           
Chilli powder      
Turmeric powder   
Mustard     
Salt       
Qty
1 cup
½ tsp
2 tsp
2 tsp
1/4th tsp
1tsp
1/4th tsp
2 tsp
to taste 


Method: 
•    Cut the carrot into thin slices
•    Combine all the ingredients, except the oil, in a bowl and mix well.
•     Keep aside.
•    Heat the mustard oil in a small pan, add it to the carrot mixture and mix well.
•    Serve immediately or keep refrigerated till use.
