Burnt Garlic Chicken
|diced chicken leg (boneless)
dry red chilli
chopped ginger and garlic
chopped red chilli and green chilli
rice wine vinegar
chopped spring onions
Marinate the diced chicken with salt, ajinomoto, egg white, and corn flour. Heat oil in a wok below a smoking pot. Dust the marinated chicken with cornflour and deep fry until it is cooked and crisp.
In the oil, sauté the dry red chillies, add chopped garlic, ginger, red and green chillies, chopped onions, and black beans and sauté. Add the chilli paste, soya sauce, and seasoning to this. Then add the fried chicken and toss along with the spring onions. Finish it with vinegar, chilli, and oil and sprinkle roasted garlic over it.
Golden Fried Prawns
De-shell and de-vein the prawns and wash thoroughly with cornflour. Marinate them in salt, ajinomoto, egg white, and cornflour. Heat oil in a wok below a smoking pot. Make batter with refined flour, cornflour, baking powder, salt, pepper, water, and oil. Dip the prawns in the batter and deep fry until it is crisp and golden brown in colour.
