Baking a cake is not rocket science; few simple steps with accurate measurements can make extremely moist and flavourful cakes.
Baking a cake is a series of instructions in which the ingredients are mixed in a specific order which produces a perfectly airy cake batter for a perfect moist cake.
Always make sure you have a perfect recipe which has been tested before,once your recipe is ready separate the dry and wet ingredients. The key step for a perfect moist cake is to sieve the dry ingredients twice before you mix them in the wet ingredients, this step will help in incorporating air into the batter
Use the best quality raising flour. If the protein percentage is more the gluten content also increases, always use cake flour or self raising flour which are best for moist cakes. Make it a point that all the ingredients like butter, eggs and milk are all at room temperature so as to avoid cuddling of the mixture while mixing.
As your ingredients are ready the next essential step is the mixing the ingredients, this is first done by creaming the butter and the sugar until the mixture is light and fluffy, now gradually add in the eggs one at a time and slowly incorporating the dry ingredients into the mixture alternating it with any liquid (water,milk or butter milk) as per the recipe. Once all the ingredients are incorporated mix the mixture gently so that the aeration is not lost.
As soon as the batter is ready transfer it into a cake tin, make sure you use the exact cake tin size as specified in the recipe so as to avoid the cake from burning .As the volume of the cake rises from 50 to 100 percent it is very much necessary to take the exact cake tin. Always use nonstick cake tins and line your cake pans with parchment paper so that the cake won't stick to the walls of the tin.
To prevent under cook or overcook of the cake make sure to preheat the oven at the required temperature for at least 10 minutes before putting the batter into the oven. Once the oven is preheated, pop in the cake tin into the oven and bake it until the required temperature. To check for doneness slightly press the cake in between and see if it springs back or insert a toothpick to see if it comes out clean. As the cake gets done let it cool till it comes back to room temperature and cut it and serve it with your choice of toppings.
