Mango-Phirni

Urlai Melagu

Ingredients                        Qty
potato                                600 gms
chopped onion                    200 gms
ginger garlic paste              20 gms
oil                                    100 ml
slit green chillies               10 gms
coriander powder               20 gms
black pepper powder          50 gms
salt                                  to taste
fresh coriander leaves        30 gms
lime juice             of          1 lime
turmeric powder                100 gms
curry leaves                      50 gms
mustard seeds                  15 gms

 

 

Instructions

Wash the potatoes, remove the skin, and cut them into slices.
Boil the potatoes and sprinkle them with a bit of turmeric powder and salt.
Heat oil in a pan; add mustard seeds and then the chopped onions. Fry them until they’re golden brown, add ginger garlic paste and sauté it.
Add turmeric powder, black pepper powder, coriander powder, and salt. Stir for a few seconds.
Now add the boiled potatoes, lime juice, green chillies, curry leaves, and chopped coriander leaves.
Serve as shown in the picture.

Mango Phirni

 

Ingredients                        Qty

cow milk                             500 ml
fresh mango                        200 gms
sugar                                 150 gms
cardamom powder               ½ tsp
pista                                 10 gms
almond                             10 gms
saffron                              5-6 strands
Basmati rice                     50 gms

 

Instructions

Soak the rice for 30 minutes. Drain the water completely and grind it to a coarse paste.
Boil the milk. Once it reaches a boiling point, reduce the flame to low and add the rice paste.
Cook while stirring continuously on low or medium flame until the milk thickens to become like porridge.
Add sugar, cardamom powder, and saffron. Cook for a few minutes until everything is blended well. Switch off the flame and allow it to cool. Then refrigerate for an hour.
Garnish with a few chopped mangoes, sliced almonds, and pista and serve chilled.
