Take a variety of churros, add the best lunch options, some serious coffee specials, and several magnificent-looking desserts, and you get Churrolto. Derived from churro, a Spanish snack, and olto meaning ‘stop’ in Spanish, Churrolto is everything but ordinary when you talk about patisseries or a bistro. With a pinch of passion, a dash of hard work, and a generous helping of creativity, Neehar Bisabathini has created the perfect place to satisfy your sweet cravings. Soon after its launch, Churrolto became synonymous with quality, offering a wide range of desserts, cakes, and pastries, apart from churros and other terrific food options. Here he gets chatting with us.
How did you get into baking?
My passions are only two: food and technology. And my goal is to figure out ways that I can integrate a sense of service for the public using those two. I’m currently pursuing my passion for food with Churrolto. Coming to baking, I have the best team with me!
Our head chef has over 30 years of expertise in this field, and a travelling count of 30 different countries. We are a team of 60 people running the whole company as one big family.
What are you most passionate about when it comes to baking?
The creations. While they are endless, I like the part where we innovate on them every day. It gives me pleasure to see our customers eat them with their eyes first. And finally, when they eat them, it gets doubled!
What has this profession brought to you personally?
A lot of gratitude! Seeing so many loyal customers and so much love every day, it feels good. I also like the opportunity it gives me to create family-like relationships with my team.
What are your customers’ favourite products?
We have endless production of new desserts every day, but a few of our classics are Sacher Torte, Golden Apple Cake, Amaretto Tart and, of course, Classic Churros.
What about competitors? It seems like everybody is getting into the baking business these days!
Yes, everyday a new restaurant or bakery opens, but also, 10 others may close as well! I always wish the newbies luck and help them along the way, as I didn’t get any kind of support when I was in my struggling days. Everyone deserves a chance to pursue their dream; everyone is welcome to the market. There’s no need to worry, as the market is big enough for some good love for food.
What were some of your initial challenges?
Every entrepreneur needs to have the ability to endure pain, insult, and constant improvement. Every day, I wake up with a hope and desire to serve my customers better than yesterday. To be honest, it will be 10 bad days and one good day during your struggling days, and after that, you just get used to it.
Do you still bake for fun? What’s your favourite thing to bake?
Yes, we cook, bake, fry, and eat cake! We love everything about Churrolto; can’t pick a favourite. – as told to Sumana
