Kousa Mahsi Couscous

zucchini                      2  
couscous                    200 gm
bell pepper                  20 gm
onion                          20 gm
garlic (chopped)          10 gm
parsley                       20 gm
lemon juice                 10 ml
salt                             to taste
chilli flakes                  15 gm
olive oil                        25 ml

1.   Take the zucchini and hollow it from the centre. Marinate with olive oil, garlic, parsley, chilli flakes, salt and pepper.

2.   Heat this on a pan and add olive oil, chopped garlic and bell pepper. Sauté, then add couscous and equal quantity of water, and cook for 5 minutes.

3.   Stuff the couscous into the zucchini and place them in an oven for 5 minutes at 180°C. Slice and serve hot.
