Jalebi, Rasmadhuri, cow, milk, oil

Rasmadhuri is a delicious Indian sweet dish made with cow milk and nuts. Another mouth-watering sweet dish made with cow milk is Chenna Jalebi. An Indian Dessert Chef from Novotel Hyderabad Convention Centre has shared these two recipes.

Rasmadhuri

Ingredients
Cow milk
Synthetic vinegar
Water  
Sugar   
Full cream milk 
Saffron strands    
Almonds  
Pistachios

Instructions

  1. Curdle cow milk after boiling by adding vinegar. Cool the whey and milk solids; strain and separate to make smooth chenna.
  2. Compress the chenna to moist square strips.
  3. Make sugar syrup by boiling sugar and water. Cook chenna squares in hot sugar syrup for 30 minutes and strain out.
  4. Bring it down to room temperature and subsequently chill in a refrigerator.
  5. Make rabdi by reducing 1.5 litres of full cream milk to half a litre over slow heat.
  6. Infuse saffron strands in the rabdi while it is still warm.
  7. Cut Chenna strips ¾ of its length—cross sectional and stuff with chilled rabdi.
  8. Garnish with silver leaf and saffron strands.

Instructions

  1. Curdle cow milk after boiling by adding vinegar.
  2. Cool the whey and milk solids, strain and separate to make smooth chenna. Put in a piping bag and chill.
  3. Make sugar syrup by boiling sugar and water. Add oil in a kadhai.
  4. On a grease proof paper, pipe out the chenna mixture to a jalebi shape. Fry in oil until golden. Drain on a paper towel.
  5. Dip in sugar syrup while they are still hot.
  6. Remove and garnish with pistachio slivers.
