Hyderabadi Subz Dum Biryani

Ingredients
Basmati rice
Desi ghee
Curd  
Haldi 
Red chilli powder
Garam masala 
Ginger-garlic paste
Jeera powder
Coriander powder
Salt
Refined oil
Brown onion 
Coriander (chopped)
Mint (chopped)
Saffron water
Carrot
Beans
Cauliflower
Green peas
Potato

Instructions:

  1. Cut the vegetables into small cubes and Shallow fry till a thin film forms.
  2. Marinate the vegetables with curd and spices. Refrigerate for three hours.
  3. Parboil the rice in flavoured water (whole garam masala, oil and salt).
  4. Layer the marinated vegetables and rice in a heavy-bottom pan. Finish off with ghee, saffron and brown onion.
  5. Seal the top of the pan with dough and cook for 20 minutes.
  6. Remove from flame and let stand for ten minutes.
  7. Garnish the biryani with saffron, ghee, chopped mint and brown onion.
