Instructions:

  1. For the sundried tomato risotto, heat oil in a pan, sauté onions, add rice for the risotto and cook by adding white wine. Then add vegetable stock and some more sundried tomatoes.
  2. Cook until the rice gets aldente. Finish with soft butter and parmesan cheese.
  3. For refried bean rice, soak kidney beans overnight, and then boil it by adding salt. After they’re boiled, add the soaked rice to the same water and cook.
  4. For the chickpea chipotle sauce, sauté the chopped onions and garlic and add diced zucchini, carrots, tomato sauce, chilli flakes, and boiled chickpeas. Season accordingly.
  5. Cook the jasmine rice in a rice cooker.
  6. For the schezwan sauce, sauté chopped ginger, garlic, and onion. Then add a small quantity of chilli paste, vegetable stock, dark soya sauce, salt, schezwan pepper, and spring onion.
  7. For the roasted lobster, marinate the entire lobster with the ingredients mentioned. Sear the lobster on a hot plate and roast it in an oven. Garnish it with beurre blanc for extra flavour.
  8. Set all three servings of rice with their respective sauces on a platter along with the whole lobster. Garnish with cherry tomatoes and micro greens.
