Murgh Zafrani Tikka

Ingredients 
Boneless chicken (cut)
Ginger-garlic paste 
Lemon juice     
Yellow chilli powder
Shahi jeera   
Green chilli paste 
Amul cheese    
Cornflour 
White pepper powder  
Mace-cardamom powder 
Egg white     
Saffron  
Hung curd  
Salt

Instructions:

  1. Marinate the chicken with salt, ginger-garlic paste, lemon juice, green chilli paste and shahi jeera. Allow it to rest for an hour.
  2. Make a second marinade with hung curd, egg white, grated cheese, yellow chilli powder, saffron, white pepper powder, and mace-cardamom powder. Cover the chicken with it and set aside for 4-5 hours.
  3. Arrange the pieces on skewers and cook in a tandoor for 12 to 15 minutes.
  4. Serve hot with lachcha onion, green chillies and lemon wedges.

Surkh Lal Paneer Tikka


 

Ingredients  
Cottage cheese
Ginger-garlic paste
Jaipuri chilli paste 
Cumin powder
Carom seed   
Kashmiri red chilli powder 
Amul cheese  
Roasted chana powder
Garam masala  
Hung curd  
Salt  
Cream  
Black salt   
Mace-cardamom powder

Instructions:

  1. Marinate the cottage c 1. heese with salt, ginger-garlic paste, Kashmiri chilli powder, carom seeds and roasted chana powder. Set aside for an hour.
  2. Make a second marinade with hung curd, grated cheese, Jaipuri chilli paste, cumin powder, cream, garam masala powder, mace-cardamom powder, black salt and salt. Allow it to rest for two hours.
  3. Arrange the cottage cheese on skewers. Cook in a tandoor for 10-12 minutes.
  4. Serve hot with lachcha onion, green chilli, lemon wedges and mint chutney.
