Crispy Fried Beijing Onion Cake is a delicious appetizer prepared with lotus flour and rich cheese. Chicken Suimai is a popular Dim Sum dish made with minced chicken, wonton sheets and flavourful spices. A chef from Novotel HICC has shared these recipes.
Crispy Fried Beijing Onion Cake
Ingredients Lotus flour Lukewarm water Chopped spring onions Cheese Sesame oil Salt and pepper |
Qty 500 gm 300 ml 300 gm 50 gm 10 ml to taste |
Instructions:
- Make soft dough with lotus flour and lukewarm water. Mix chopped spring onions, cheese, and sesame oil.
- Portion the dough into 50 gm each and roll into thin sheets. Place the cheese and onion mixture in the middle and seal into fancy shapes as desired.
- Fry them until crispy and golden brown, and serve with soya garlic sauce.
- Chef recommends frying the onion cake in moderately hot oil this will prevent the cheese bursting out of the dumpling.
Chicken Suimai
Ingredients Wonton sheets Minced chicken Chopped ginger Sugar Oyster sauce Salt and pepper Soya Sautéed garlic (chopped) |
Qty 20 pieces 500 gm 10 gm 20 gm 20 gm to taste 30 ml 20 ml |
Instructions:
- Mix the minced chicken, chopped ginger, sugar, oyster sauce, and salt and pepper. Then place the minced chicken mixture in wonton sheets and seal them.
- Steam the suimai for seven minutes in a wicker dim sum basket and serve with soya garlic sauce.
- Chef recommends a little garlic juice in the sauce to get a strong flavour.
