Mushroom Soup

Healthy and tasty Mushroom soup is made with delicious mushrooms and chicken stock. It is a dish to enjoy on a rainy day. Mushroom Soup

Ingredients   
Champignon mushrooms  
Dry porcini mushrooms
Starchy potatoes (diced)
Chicken stock      
Cooking cream
Onions (chopped) 
Garlic (chopped)
White wine   
Olive oil      
Truffle oil  
Baguette

Instructions:

  1. Dice the fresh mushroom and the potatoes.
  2. In a saucepan, heat olive oil, add onion and garlic, sauté. Add the potato and the mushrooms, sauté for a few seconds, add white wine and chicken stock, bring it to a boil.
  3. Add the dry porcini mushrooms and let it simmer for one hour. Add the cooking cream, set aside till it reaches room temperature.
  4. Blend and strain the soup, boil it again and season as desired.
  5. Make croutons from the baguette, add it to the soup, drizzle with truffle oil.

Chicken (young, with skin)

Mashed potato  
Cajun spice 
Thyme

Instructions:

  1. Cut and bone the chicken, except for the leg and wing.
  2. Place it on a baking tray with crushed garlic, olive oil, Cajun spice, thyme and all other seasoning. Bake for 15 minutes at 200°C.
  3. Remove from the oven, serve hot with light red wine sauce, mashed potato and garden green salad.
