Vegetable Caponata

The sweet and sour Caponata blends well with fresh and healthy vegetables along with a creamy cheese makes it a delicious Italian appetizer spread on French loaf, focaccia or crackers. Juicy and tender steak marinated with sweet French mustard, the red wine is added to make the dish more flavorful. Mustard Marinated Tournedos Steak served with rice is the perfect meal.  A chef from Taj Deccan shared these two recipes.

Vegetable Caponata                                                

Ingredients

olive oil  
roma tomatoes (diced)
yellow bell pepper (diced)
red bell pepper (diced)
zucchini (diced) 
eggplant (diced) 
italian parsley (finely chopped) 
garlic  cloves (finely chopped)
black olives  
french loaf  
grated cheese      
salt   
pepper

Instructions:         

Toss all the diced and chopped vegetables (except parsley, tomatoes and black olives) in olive oil and add salt and pepper. Cover and cook the vegetables till they’re tender. Add the parsley. Serve hot with tomato and black olive crostini. Add the parsley at the end, and correct with salt and pepper to taste. Serve hot with tomato and black olive crostini

For crostini:

Cut French loaf into slices and toast it. Make a mixture of the tomato and olives, season with salt and pepper. Add some finely chopped Italian parsley. Top the mixture with grated cheese and gratinate. Drizzle with pesto oil.

Tournedos Steak

Mustard Marinated Tournedos Steak

Ingredients  

tournedos steaks (80 gm each)

haricot beans (peeled)    

potatoes (diced)     

garlic     

red wine 

French mustard

olive oil    

seasoning

butter

sesame seeds  

saffron

Instructions:         

Marinate tournedos steaks in salt, pepper, olive oil, mustard and herbs. Set aside. Sprinkle with some sesame seeds. Boil and mash the potatoes, and blanch the haricot beans. Toss the blanched haricot beans in butter and season well. Now sear the tournedos steaks in a shallow pan on both sides and keep it in an oven until done to desired degree. Heat a pan and add shallots, garlic and red wine. Reduce it to half, then add butter, and season it to finish the sauce. Melt butter in a pan and add the mashed potatoes and saffron to it. Season to taste.
