Delicious Desserts: Strawberry Ricotta Cheesecake And Strawberry Mascarpone Sandwich

It is time to celebrate berry season with the two finger-licking strawberry desserts, the Strawberry Ricotta Cheesecake is a delicious sweet dish made with fresh strawberries and cheese crackers. Strawberry Mascarpone Sandwich is another mouth-watering dessert made with flavourful strawberries and macaroon. A chef from Novotel HICC has shared these two recipes.

Strawberry Ricotta Cheesecake

Instructions:

  1. Cook the strawberries with 100 gm of sugar and 100 ml of water until soft.
  2. Powder the biscuit, and mix with castor sugar and soft butter. Spread the mixture on a tray for the base of the cheesecake.
  3. Mix the cheese, caster sugar and corn flour in a mixing bowl. Step by step, add the eggs, cream, melted butter and cooked strawberry. Pour the cheesecake mixture onto the base and arrange on the tray.
  4. Bake the mix in a double boiler at 160°C for 45 minutes and serve chilled. Serves 20.

Strawberry Mascarpone Sandwich

Instructions:

  1. Beat the egg and caster sugar for the macaroon. Make a stiff meringue, and fold in the remaining dry ingredients and colour into the meringue mixture.
  2. Pipe the macaroon mixer onto a baking sheet and bake the macaroon at 180°C for 12 minutes.
  3. For the pastry cream, boil the milk and add the remaining mixture except the butter. Boil for three minutes, then add butter and set aside.
  4. Assemble the macaroon with pastry cream, whipped cream mixture and fresh strawberries. Serves 20.
