Black Rice Arancini
1. Oil, sauté the chopped onion, garlic, celery, and leeks in a pan, and cook it till it turns soft. Add rice and water and cook till that also it turns soft. Add the parmesan and adjust the seasoning. Allow it to cool down.
2. Make it into dumplings. Coat the dumplings with bread crumbs and deep fry them. For the salsa, blanch the tomatoes, remove the seeds and skin, chop them, and then add chopped chillies, salt, crushed pepper, parsley sprigs, cilantro, and serve it along with garlic mayonnaise.
