Avocado-stuffed poached pears

feta cheese                   40 gm

For poached pears:
William pears                  2
grape juice                     300 ml
bay leaf                          2
cinnamon                       2 sticks
sugar                             100 gm

For watermelon basil shots:
watermelon                    2 slices
basil seeds                    5 gm
basil leaf                        3 sprigs

For the avocado:
lemon juice of                 ½ a lemon
extra virgin olive oil        10 ml
salt                                 to taste
dry oregano                   a pinch
black pepper                  3 gm


1.   To make the poached pears, peel them, and simmer with grape juice, cinnamon sticks, bay leaf and sugar. Cook for 15 minutes. Once the pears are blanched and absorb colour, drain and cool.

2.   To make the watermelon basil shots, soak the basil seeds in water for 20 minutes. Meanwhile, make  watermelon juice, and chill in a deep freezer for 30 minutes. Add basil seeds to the juice, and pour into shot glasses or test tubes.

3.   To make the avocado marinade, take a soft, ripe avocado and halve it. Marinate with lemon juice, salt, crushed pepper, oregano, and olive oil.

4.   Place the sliced and de-seeded poached pear carefully into the desired shape. Stuff it in the marinated avocado, and top with feta cheese. Serve with watermelon basil shots.
